Peas and Paneer Curry

(From Banu's Cookbook)


There are many versions of Peas Paneer aka Matter Paneer Curry out there. So I am sure mine is influenced by many of them. But here is a version that is the result of my experimentation.

Ingredients:

Paneer - 400 gms (I use Nanak Malai Paneer from Indian Stores)
Frozen Peas - 3/4 cup (you can increase or decrease this based on your taste)
2 Small Red Onions - Chopped Roughly
4-5 Garlic Cloves
1 inch piece of Ginger
4-5 Tomatoes (I used Roma Tomatoes, but any work)
1 tsp Turmeric Powder
1-2 tsp Red Chilli Powder
2 tsp Dhaniya Jeera Powder
Jeera for Seasoning
1/2 inch Cinnamon Stick, 1 small star anise, 1-2 Cardamon, 1-2 Bay leaves for Seasoning
1 can of Coconut Milk (13-14 oz can) (I get the full fat one)
Salt to Taste
Butter or Ghee for cooking
Finely Chopped Cilantro for Garnishing
1/2 tsp of Dry Kasoori Methi for Garnishing

Method:

1. In a pan, heat a bit of butter, add the chopped onion, ginger and garlic and saute on medium heat until the onions are done (they become translucent) and also it becomes a bit brown. Let this mixture cool and then grind it into a smooth paste with little or NO water.
2. Cut the paneer into the bite size that you want and soak it for 10-12 mins in Warm water, so that it softens.
3. Cook the peas, drain the water and add ice cubes to retain the green color of the peas.
4. Boil the tomatoes, peel the skin and grind it into a paste.
5. In a pan, heat some butter, add all the seasoning items - Jeera, Star Anise, Cinnamon etc and fry for a few mins. To this, add the ground onion mixture and cook for 5-7 minutes. If the mixture is splattering (as mine does sometimes), cover it with a lid, but keep the lid open, so that steam/water does not build up.
6. Once this mixture is well cooked, add the dry masalas - Dhaniya Jeera powder, Turmeric, Red Chilli Powder and mix well.
7. Add the Tomatoe paste/puree and mix well and let it cook until you can see oil separating at the edges.
8. Now add the Paneer pieces, peas, coconut milk, salt and mix well and let the whole mixture boil for a few minutes on medium or medium-low fire.
9. Turn off the heat and garnish it with Chopped Corriander Leaves and a bit of Kasoori Methi Powder (I take the dry kasoori methi leaves, crush it in between my hands and add it).

Serve it hot with Chapathi, Poori or Rice

Notes:

1. You can use home made paneer or any other Paneer. I am just giving you the brand that I like to use. You do not have to soften the paneer, but it tastes better and absorbs the masala better if it is soft.
2. You can use canned tomato puree or paste, but the fresh made one tastes better.
3. I have tried using the low fat coconut milk, the taste is way different and the curry is more watery. So, full fat coconut milk works better for this recipe.

Paneer Stirfry with Cabbage and Bell Peppers

Ingredients:

1 Cup of Fresh Paneer (Cubed)
1 small head of Cabbage - Finely Chopped
1-2 Bell Peppers  - Chopped (I used a combination of Yellow and Red Bell Peppers)
Oil To Sautee
1/4 tsp Turmeric Powder
1-2 Tsp of Cumin Powder
1 Tsp of Corriander Powder
1 Tsp of Red Chilli Powder
Salt to Taste

Method:

1. Pan fry the paneer cubes with very less oil in pan and keep it aside. In the same pan, heat some more oil and sautee the bell peppers.
2. In a Wok, add some oil and once it is hot, add some cumin seeds and then add all the dry powders and saute for a few mins and then add the chopped cabbage and cook it for 10 mins with a lid on and very slow fire. This way you can cook the cabbage completely and yet keep it crisp and not soggy.
3. Once the cabbage is done, add the paneer and the bell peppers, salt to taste and mix well. You can garnish this with chopped coriander leaves.

Paneer stir fry is ready and can be eaten with Chapathi or Rice. I had it just like this with some salad.

Corn and Paneer (Cottage Cheese) Taco's

Ingredients:

2 Corn Tacos (Store Bought)
1 Cup of Paneer cubes (I cut them into kind of smallish cubes)
1 Cup of Cooked Sweet Corn Kernels
2 Tbsp of Cilantro - Finely Chopped
1/4 Cup of Finely Chopped Onion (I used Red Onion)
1/4 Tsp of Lemon Juice
2 Tsp of Date-Tamrind / Sweet Chutney
Oil for Sauteeing

For Seasoning:
1 Tsp of Jeera (Cumin) powder
1 Tsp of Dhania (Corriander) Powder
1 Tsp of Red Chilli Powder (Adjust this according to your taste)
Salt to Taste

Method:
1. Heat the Oil in a pan and add the chopped Onions and Saute until they are translucent.
2. Add the Sweet Corn and Paneer Cubes and Saute for a few more mins.
3. Add the Masala powders including the salt. Also add Cilantro and Lemon Juice and saute until everything is mixed well.
4. Heat the Taco's in the Oven per the box directions, take it out and fill the taco's with the Corn and Paneer Mixture. Drizzle the sweet sauce on top and serve it Warm.

Notes:
1. Instead of Taco's, you can use Pita Chips, Corn Tortilla Chips or Papdi poori's on a plate and spread the corn paneer mixture on it and then add the sauce.
2. You can even wrap this mixture in a plain paratha for lunch box.

Kadai Paneer

Ingredients:

2 Cups of Chopped Paneer
1 Medium Sized Onion - Chopped Fine
3-4 Roma Tomatoes Chopped 
1-2 - Capsicum (Green Bell Pepper) - Chopped
3 Tsp of Dry Corriander Seeds
5-6 Red Chillies (or more according to taste)
2 Tsp of Jeera Powder
2 Tsp of Garam Masala
Jeera for Seasoning
Oil for Sauteeing

Method:
1. Pan fry the Paneer cubes with little bit oil. Keep it aside.
2. In a pan dry roast corriander seeds and red chillies together. Grind them into a smooth paste with tomatoes.
3. Heat some oil in a pan and add some jeera seeds. Then add chopped onions and sautee until brown. Then add the ground tomato paste and saute for some more time until the raw smell of tomato is gone.
4. Then add the chopped capsicum, Jeera powder and garam masala and fry for a few minutes. We do not want to over cook the bell pepper. Then add the paneer pieces, salt and cook for some more time until paneer absorbs some of the masala.
6,. Kadai Paneer is now ready to be served with either Rice or Chapathi.

SAUNF PANEER TIKKA

Ingredients
250 g paneer
salt to taste
1/2 tsp white pepper powder
1 tsp ginger paste
1 tsp brown onion paste
1 1/2 tsp (7 g) saunf paste

Method
Cut the paneer into 10 cm. square slices.
Mix together salt, pepper powder, ginger paste, brown onion paste and saunf paste.
Apply it to the paneer slices and keep aside for 15 minutes, so that the paneer absorbs the flavour and taste of the marinade.
Arrange them on skewers (sheekh) and cook in a clay oven (tandoor) till you get the aroma of saunf.


Serve hot with tomato slices, lettuce and green chutney.
